A Little Peach Pie Anyone?

Peach Pie

For this recipe you will need:

4 cups of sliced peaches
1/3 cup lemon juice
1 1/2 cups sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 3/4 cups all purpose flour
3/4 cup butter

This is so easy to make and everyone loves it. The hardest part is peeling and slicing your peaches. I usually nibble on them while I'm doing it as this makes it seem less like a chore, unless you nibble too many. Then you have to work at it longer. 
After you get your peaches ready, put them in a saucepan with 1/2 cup of the sugar and the lemon juice to let them cook a little bit. Then add your cinnamon and nutmeg. Smells so good!


Now you want to make your crust while the peaches cool a little. Put the remaining sugar, 1 cup, and your flour and butter into a bowl and cut the butter into the flour/sugar mixture. You want it to look like small peas when through. This takes a little while but not that hard to do. 

Grease you pie plate or whatever dish you are using and put about half the mixture in and press to make the bottom crust.

Put about a 1/2 cup of the remaining mixture into the peaches and stir it up, then pour into your crust.

Now put the rest of the crumb topping on top and you can sprinkle on a little more cinnamon too if you so desire. I think there is enough in the peach mixture, so I don't add anymore.


Put this in a preheated 375 degree oven and let it bake for 25 to 30 minutes. If it doesn't get brown enough for you, turn on the broiler for a few to get the color. Watch it though and don't burn it!


Now you are ready to enjoy one of the simplest things in life! You can serve this by itself or with some cream topping. I like mine with vanilla ice cream...Yummy!
